Easy as Coconut Custard Pie

In the Summer months, you crave dessert but don't feel like spending all day in a hot kitchen. Here is a way to have your pie and eat it too! This pie will taste like you spent all day fixing it, but instead you can binge read a couple more chapters in your latest book. Let the magic of the recipe do the work for you. Your secret is safe with us!

1/2 cup Bisquick

3/4 cup sugar

4 eggs

2 cups milk

1 cup flaked unsweetened coconut

1 teaspoon vanilla

1 tablespoon softened butter

1/8 teaspoon salt

1/8 teaspoon ground nutmeg

Preheat oven to 400 degrees. Spray 9 inch pie pan with non-stick spray. Combine all ingredients and pour into pie pan. Bake 25-30 minutes or until custard is set.

Through the baking process, the ingredients will separate into 3 layers with a soft crust bottom, custard center, and coconut flake top.
