This chicken bite recipe takes your guilty pleasure of chicken nuggets and because we bake or air-fry instead of using oil, it makes this treat guilt-free. We use real chicken instead of pressed chicken to make chicken bites. Its less McGuilt and more Chick-fil-icious! Try our homemade version of this favorite finger food for kids and grownups alike!
Ingredients:
1/2 cup dill pickle juice
1/2 cup buttermilk
2 pounds boneless, skinless chicken breast
1 egg
1 cup seasoned flour (If you don't have this, you can make your own. See below)
2-3 cups Panko bread crumbs
2 gallon-sized zip top bags
Directions:
Brine: Rinse and clean the chicken breasts. Pat dry with paper towel. Cube into 1 inch bite-sized pieces. Place cubed chicken in a medium bowl. Add buttermilk and pickle juice. Gently stir to mix and ensure chicken is covered with brine. If brine doesn't cover chicken, add equal parts pickle juice and buttermilk to cover. Cover with lid or plastic wrap and let marinate for at least 1 hour in fridge.
Seasoned flour: If you don't have seasoned flour, you can make your own with 1 cup flour and 1-2 teaspoons of your favorite seasonings. Old Bay is an all-around great choice for seasoned flour. Kick'n Chicken by Weber or Grill Mates Montreal Chicken Seasoning by McCormick are other delicious choices. Add to zip top bag and mix well.
Egg wash: Using slotted spoon, remove chicken bites from the brine placing on a plate with paper towel and reserve the liquid. Add the egg to the brine liquid and mix well, then set aside to use for wash.
Assembly:
Seasoned flour and Panko bread crumbs should each be in their own zip top bag.
Take a handful of chicken bites and drop them in zip top bag with Seasoned Flour and mix until coated.
Remove them and dip them in Egg Wash until coated.
Remove them and place them in Panko bread crumb zip top bag and mix them till they are well coated.
Remove and place to the side for cooking.
Repeat until all your chicken bites are ready.
Cooking:
Air-fry on 380 for 20 minutes using the rotate feature if available (stir multiple times or flip if not available).
or
Conventional oven bake on 400 for 20 minutes flipping halfway through.
Check temperature of largest bite and it should be at least 160 degrees on the inside.
Reheating:
You can freeze the leftovers and reheat for 4-6 minutes for a quick and easy meal later
