Farmstead Stuffed Squash

Bacon? Cheese? Delicious? This squash recipe checks all the boxes and will have your family begging for more squash! You can use this as a side or a meal.


3 medium Hurakan squash (yellow squash or zucchini)

1 cup bread crumbs

1 cup Cheesy Bacon Dip

1 egg




Wash squash and cut in half lengthwise. Scoop the meat out of the squash to make a squash boat. Remove as many seeds as possible and discard, but reserve the meat. Coat outside of the squash with olive oil and place on cookie sheet. Sprinkle top of squash with salt.

Dice the squash meat and place in large bowl. Add 1 cup warm Cheesy Bacon Dip, egg, and bread crumbs. Mix thoroughly then scoop into hollowed squash boats rounding slightly. Sprinkle top with salt and fresh ground pepper to taste. Bake on 375 for 20-25 minutes.

Preserving the harvest:

Optional freezer option is to wrap these individually in aluminum foil before cooking and freeze.
