Farmer's Noodle Bowl

Everyone loves the comfort of noodle soup, but how can you make this bowl sodium filled carbs a little healthier? We add a little protein and a bit of veggies from the garden to give this bowl of comfort a little more crunch and a lot more nutrients.


1 package roast chicken Noodle soup

1 turnips washed, quartered and sliced

6 baby carrots sliced thin

1/2 cup sliced green onion

1/2 cup peanuts

1 hard boiled egg


Bring 2 cups water to a boil in a small pan. Add turnips, carrots, and noodles (reserve season packet) and boil for 3 minutes. Add peanuts, green onions, and season packet and stir until blended. Pour into bowl. Slice hard boiled egg and serve on top of the soup.
