Need a refreshing, light side dish on a hot summer night? This cucumber salad is cool and delicious. In some parts of this dish is also called "new pickles" and the taste is referred to as "hardly dunked in brine." The bit of sugar cuts the tart vinegar and combines to make a light and healthy side dish that is colorful and pairs nicely with most meats. I paired mine with the Basil Butter Salmon (recipe found here).
Ingredients:
1-2 medium cucumbers
6 cherry tomatoes
1/4 cup diced onion
2 cups vinegar
2 tablespoons sugar
ice
Instructions:
Wash all cucumbers and cut in thick slices. Wash tomatoes and cut into quarters. Place all veggies in medium bowl preferably glass. Sprinkle sugar across the top and slowly add vinegar into the bowl. Stir until sugar is dissolved. Add about 1 cup ice and let marinate at minimum of 1 hour, preferably 6-8 hours. Drain and serve.
