Steak Salad with Pickled Beets and Goat Cheese

2-3 cups washed and chopped lettuce

3 radishes thinly sliced

1/2 cup finely diced onion

3-4 ounces goat cheese

1 pound flank steak 1 tablespoon oil

2 cups S&F Tequila Lime dressing alternatively you can make your own using our copycat recipe


Cut steak into bite sized chunks and marinate in 1 cup of dressing for a minimum of 1 hour (preferably overnight).

Add oil to skillet over medium heat and add steak once oil is hot. Cook over medium high heat, stirring frequently until meat bites are browned on all sides.

Assemble salad:

Lettuce on the bottom, then goat cheese crumbled over entire salad, then sprinkle diced beets. Pile steak in the center and sprinkle onion and radishes around the outer edge. Drizzle Tequila Dressing over the steak.

Serves: 2 medium-large salads.
