Basil Butter

Basil butter is spectacular topping fish or simply spread on bread. I use mine in this Basil Butter Salmon recipe and it comes out tender and delicious with no fishy aftertaste. This is a great way to save your harvest for later use and enjoy the fresh flavors of Basil all winter long.

Ingredients:

1-1/2 cups basil washed stem and all

1 cup butter

2 garlic cloves

1 tablespoon lemon

1/2 teaspoon salt

1/2 teaspoon pepper


Instructions:

Add all ingredients to food processor and blend until pureed and smooth.

Refrigerate in air tight container.


Additionally, you can double or triple this recipe and freeze the butter in an ice cube tray. Once frozen, pop out the cubes and add them to the meat you will cook with before freezing it or store them in a zip top bag in the freezer.


Optional:

Add 3 drops green food coloring.

This is naturally a light green color with darker green flecks of basil which to some may appear less appetizing. Adding 3 drops of food coloring makes this a more uniform green throughout.
